# Which olive oil to buy?
Only buy:
- **Extra virgin olive oil** (EVOO), meaning oils that are mechanically pressed only and have no acidity (Virgin olive oil). The terms "cold-pressed" or "first press" don’t mean anything else or anything different.
- The freshest oil possible (ideally, you have the **harvest and pressing dates on the container**).
- **Specific olive species** with a certain level of polyphenols and oleic acid. The olive varieties with the highest polyphenol content are:
- **Cornicabra**,
- **Moraiolo**,
- and **Koroneiki**
